Granola Recipe


I want to share a recipe for Granola with you. This is what I eat almost every day for breakfast. I think it has many ingredients that are healthy. Oats for heart health, craisens for urinary tract health, almonds for protein etc. One of the great things is this cereal will stay with you for hours. I make a double batch and keep it in the frig.


The nice thing is it is flexible and you can substitute for most of the ingredients


Granola


1/2 teaspoon (t) baking soda

2 c regular rolled oats (not instant)

1/2 c flaked coconut

1/2 c slivered almonds

3/4 c bite sized dried fruit ( I like Craisens)

3/4 c milled flax (very high in fiber)

1/4 c honey

1/4 c brown sugar

1/3 c Canola cooking oil

1 1/2 c Rice Krispie type cereal

1/2 t cinnamon

1 t vanilla


Mix all ingredients well. Place in an oven safe pan. I use a large roaster for a double batch. Bake at 325 degrees for 15 minutes. Stir well. Return to oven for 15 minutes.


I leave the granola in the oven to cool with the oven off and the door open so it can continue to crisp and brown. Just watch that it doesn't get too brown.

    I fully understand your loss too. My firstborn son, Jeffrey David, died with lymphoma cancer when he was only 6 months old. I was only nineteen years old myself and physically and mentally felt like I was torn apart so badly and for so long, there was no hope. It was three years later that my second son, John, was born and he was and still is such a blessing. . . I ended with five sons and raised four. Each one is so precious and no one else could take each of their place as no one else could take the place of my firstborn.

    I guess what I want to tell you is that even after fifty some years later when I talk about him I must separate from my emotions or I cry. I have such compassion for that young mother, Nora, back then and I have the same for you, Karla. It's a lie to say we get over the death of our children. But the God Presence in each of us gives us the untold peace and restores Joy again in our hearts. . . . . . these are not trite words.
